The typical Instagram breakfast;

There’s no denying that I am a massive foody. I’m not particularly healthy though, which is something I’m working on changing. I used to be a big health freak but I lost all motivation. I mean It’s not even like I don’t like ‘healthy’ food because I love it.

One thing I’m definitely guilty of is not eating breakfast in the mornings, unless I’m on a late shift. But when I do make breakfast, I make it good. My personal favourite at the moment being; avocado topped toast with poached/soft boiled eggs and then either adding crispy bacon or smoked salmon on the side.

I like to use my Pestle & Mortar to crush the avocado, adding a pinch of Paprika, lemon juice, salt & pepper and recently adding a ting bit of a Chilli & Garlic salsa that Jack and I picked up at a food festival recently. (It’s delicious!)

I like either poached egg or at the moment soft boiled egg on top of the avocado, as long as it has a runny yolk! Crispy bacon or smoked salmon giving a nice touch of saltiness and then sometimes I’ll add a handful of roasted cherry tomatoes to give a bit of sweetness.

I’ve definitely got a bee in my bonnet again to get myself back on the healthy road. I love cooking and experimenting with different flavours and foods, so I’m going to make the most of it and make some things that I’ve done before.
